在旅游西班牙风景如画的古城塞哥维亚时千万不能错过去这家150年的老店品尝最古老传统的烤乳猪。

塞哥维亚是统一西班牙的卡斯蒂里亚女皇伊莎贝拉23岁登基的“龙兴之地”。今年正隆重纪念这位对世界历史作出重要贡献的女皇登基550周年大庆。

Segovia is the old capital of Castile where the

world famous Queen Isabella was crowned 550

years ago , for which many celebrities are going

under way.

在这样的日子造访这座名城，华人游客不要错过口福，去品尝一下与北京烤鸭齐名的塞哥维亚烤乳猪。

In such a historic movement , visiting such a

historic city, the Chinese tourists must try the city’s

traditional cuisine, Roasted sucking pig, which is as famous as Peking Duck in the West world.

我虽然对此早有所闻，也知道当地有许多歺厅提供这道荣，而万幸的是我偶尔造访了城中最著名的Casa Duque 歺厅。

Though I know this cuisine for a long time, and I

was also told that many restaurants have it in their menus , the lucky thing is during my 2 days short

visit I happened to enter a right place at a right time. And have a special VIP sitting in Duque,

我逛街时被这家古色古香的的老店所吸引。进店后得知有这道名菜，我喜不自胜，马上抓紧拍它美丽的休置。

I was attracted by this beautiful decoration .Being

told that lechon is in the menu I asked permission

to taking photos first .

接下来我看到这个，原来他们就是2020年时经营这家百家老店的店东与大厨夫妇。

Then I saw this statures and was told they are the

chiefs and owner of this hundred years old

restaurant,

后来又见到这张照片，大厨边上站着的不正是西班牙国王胡安·卡洛斯一世吗。

Later I found that Spanish King , Juan Carlos I is

exactly standing beside the chief.

原来早在他年轻还末登基只是王子的时候，他就是这家歺厅的贵宾。

When the former King was still Prince, he already paid visit here，

而他的妻子，希腊国王的长女，索菲亚公主当时也一起来作客。

And the young Princess Sofia was also the

distinguished guest.

I was warmly welcomed by the staff.

接着一位英俊的年轻人走来向我问好。他作了自我介绍，他就是少东家Luis Duque。他介绍说他己经是第六代传人了。他们家族自1895年以来一直经营这家主打烤乳猪的歺厅。雕塑像是纪念己故的祖父母,Mr.Dionijio Duque and wife,自己从小就在他们和父母的培训下学会这门手艺。我冒味问了一下，你成家了吗？他说还没有。我又问，以后你是否打算把手艺传给孩子，按西班牙习俗，可以传给女儿吗？他笑笑说，都可以。当然首先还是尊重他们自己的意愿，他们颐意，我会尽力教会他们祖传手艺.从而一代接一代再传承下去。当得知他己28岁了，我笑道你一定是西班牙最受瞻目的单身汉了。我问了下中国客人多吗？他说不少，经常有中国遊客光顾，中国人讲究口味，猪肉又是华人的主要食材。除游客很多外，来办公务的官员及公司高层也常来。他笑笑说，中国以北京烤鸭闻名，我们是烤乳猪，可以多多交流。

Then a handsome young man came to greet me,He introduced himself as the sixth generation of this

family based restaurant.

The stature is to memorise his grandpa, Dionijio

Duque and his grandma.As a teenage he himself was

trained by them and his parents.Yes, its a chiefs

family all devoted to keep the famous local cuisine ,roasted suckling pig in Segovia.that their family

has continually been running this restaurant in the

past 150 years, the oldest in Segovia.

With a bit curiosity I asked him will he pass on the skill to his children, and according to local tradition, can the family kept skill be taught to the girls?

He laughed.saying firstly he is still single. And

should he had children in the future, in Spain. boy

and girl are same , they both can learn the family

skill. Of course, first thing first is they are willing

to do this business.

When I was told he is 28. I told him I believe that

he must be a striking bachelor! I asked is there

Chinese customers here.He is happy. Yes , he said, many Chinese tourists come to visit. Pork is

traditional food for Chinese and they love our

cuisine with high taste. Also many visiting Chinese officers and business leaders have also come to the restaurant .

这就是刚出炉的烤乳猪。半只乳猪一般可供六人亨用，这是我点的一份，我注意到这是最显眼的头部那一部分，带有一只可爰的耳朵。

烤乳猪色香味俱全，外表光鲜，脆而不腻，肉质鲜嫩多汁，並无其他西方食品添加剂的怪味，很合华人讲究鲜，嫩，不油等品味爰好。记得上世纪八十年代，我曾与杭州旅游部门高层一起受到北京全聚德烤鸭店经理的宴请，那盘烤鸭的诸多好吃之处与这份烤乳猪可谓是旗鼓相当。所以它广收华人食客青睐是理所当然的。只是塞哥维亚的知名度还不算太高，我会接下写一篇专门游记，请读者关注。其实塞哥维亚离马德里非常近，坐火车不到半小时，很方便自助游。另外也可参加马德里的一日游。

The roasted suckling pig is here on the table with

all the main three elements “ colour, smell, taste”

both spread over the plate. I noticed that that it

might be a special portion, the head part with a

beautiful funny little ear ! Its roasted skin is smooth and tasted delicious, crispy, but no oily, One thing

important for Chinese customers is this cuisine

doesn’t has some western herb , it is just tasted as

our mostly favourite cuisine: the world famous

Peking Duck! So it will be a good choice if you

visit Segovia!
