<p class="ql-block"><span style="font-size:20px;">昨早地铁去北华街，D口上，回走转弯，熟门熟路，郑师傅牛肉面。</span></p><p class="ql-block"><span style="font-size:20px;">寒风凛冽，不得堂食，略为一惊，没想到纸坊的防控比中心城区的还严肃。餐后顺斑马线去马路对面的集贸打货。</span></p><p class="ql-block"><span style="font-size:20px;">与中心巷街相对的中心巷，被衙门一不做二不休竖起了新夹板围栏，真是青玲是个筐～。跟武焊市区的铁皮围栏相比较，谁的成本更高呢。</span></p><p class="ql-block"><span style="font-size:20px;">偏角走廊是集贸市场外围，散卖菜户扎堆，基本不是贩子，蛮地气的。请我逛群光难受之极，寻原生态菜如鱼得水。可惜今天卖菜的被清零。</span></p><p class="ql-block"><span style="font-size:20px;">借助“篱笆”缺口，跨进中心巷再穿越进巷街。往日街头巷尾的喧闹不在，门前冷落车马稀，一声叹息，来的不是时候。</span></p><p class="ql-block"><span style="font-size:20px;">与中心港街贯通的老小区（宿舍），铁条栅子门也锁了，但还是发现什么，咱比🐶的鼻子还灵，</span></p> <p class="ql-block"><span style="font-size:20px;">走更近，确认难得有对外卖金牛千张皮的，那是传统规矩“十张一把”的豆腐皮，韧性足、薄如纸的豆制品。</span></p><p class="ql-block"><span style="font-size:20px;">就像五十年前做小买卖如同做贼一样的年代，被城管淫威，那妇人怯在正巷子道上吆喝。只能隔着栅栏，在院子里与院子外打货的细声切磋。这冬天，除了逼凉为苍，真还不知用啥形容词了。</span></p><p class="ql-block"><span style="font-size:20px;">俺可是喜出望外，不断飘扬这千张细的好哟，那妇人也欣喜遇到识货的，蒸是惺惺相惜。记得北华街地铁站开张初，在中心港街街头有守株待兔卖此皮的，后来不知啥原因，金牛皮子消失。不排除被另几家痞子豆腐贩排挤出市场。</span></p><p class="ql-block"><span style="font-size:20px;">买的眼中放光，卖的脸上芳花，不需讨价还价，妇人已将五元五角削了零头，沟通很重要啊。</span></p><p class="ql-block"><span style="font-size:20px;">大治金牛千张，准确叫金牛镇皮子，像似豆油皮但不是豆油皮，锅煮不破，咀嚼劲足（筋道），打结秀气，油炸精神。更重要的是，撕点千张放口慢嚼，有股淡淡的原生态豆香味，而不是豆腥味。</span></p><p class="ql-block"><span style="font-size:20px;">金牛镇皮子，就像贵州丹寨的古法造纸术，过程中，将碎豆腐脑用瓢将其浇到木匣子里的皮子布上，浇一层豆浆，用皮子布折叠盖上一层，周而复始～。关键点，土黄豆、点石膏术和毛铺源泉水，缺一不可。</span></p> <p class="ql-block"><span style="font-size:20px;">俺以为，淮扬素菜千张结五花肉，一旦用上金牛皮子结，低俗粗鲁变灵巧风雅，植物蛋白动物蛋白珠联璧合，那是下里巴人华丽转身阳春白雪脱胎换骨也。</span></p><p class="ql-block"><span style="font-size:20px;">引用六级焊厨原话“先将五花肉焯水后过油稍微炸一下然后把调料炒岀香味放肉翻炒入味后倒开水煮沸转小火慢炖估计一个小时左右口试肉已炖好移出灶台，紧接用电水壶备烧的开水倒入锅内将千张焯水和过油，二合一后再大火收汁”。</span></p><p class="ql-block"><span style="font-size:20px;">补充两句，五花肉小火炒冰糖上色，大火滚水一次性淹没。至于干🌶️不要喧宾夺主。</span></p> <p class="ql-block">In that misty morning when I saw your smiling face 在那个薄雾清晨，我看到你微笑的脸庞 You only looked at me and I was yours 只那一眼，你便将我俘虏 But when I turned around 可在我转身时 You were nowhere to be seen 你却无迹可寻 You had walked away and closed the door 你已离去，大门已紧闭 When will I see you again 何时能再见你 When will the sky start to rain 天空何时会落雨 When will the stars start to shine 星辰何时会闪耀 When will I know that you're mine 我何时才能拥有你 Did I ever meet you in the sunshine 你我是否曾在阳光下相遇 And when we were about a thousand years away 那相遇仿佛隔了千年 Did I ever hold you in the moonlight 我是否曾在月光下拥你入怀 Did we make every minute last another day 是否让每一分钟都变成了永久 On a cold December night I gave my heart to you 我在一个寒冷冬夜将心付给你 And by the summer you were gone 你在夏季离我而去 Now as the days grow older and the stars will start to dim 时光飞逝，星辰远去 All I have are memories and this song 只有回忆和这歌声陪伴 When will I see you again 何时能再见你 When will the sky start to rain 天空何时会落雨 When will the stars start to shine 星辰何时会闪耀 When will I know that you're mine 我何时才能拥有你 When will I see you again 何时能再见你 When will the sky start to rain 天空何时会落雨 When will the stars start to shine 星辰何时会闪耀 When will I know that you're mine 我何时才能拥有你 In that misty morning I saw your smiling face... 在那个薄雾清晨，我看到你微笑的脸庞.</p>
