【食材】:黄花菜200克,辣椒50克,姜、蒜、食盐、鸡精、陈醋、香油各适量。
做法:
1. 将黄花菜洗干净,锅中加入水烧开,放入黄花菜煮熟。

北京大学公共卫生学院营养与食品卫生系主任马冠生介绍,要想既享受黄花菜的美味又避免中毒,就需要了解吃黄花菜的正确方法。
1.新鲜黄花菜吃之前最好去掉花蕊,因为花蕊中所含的毒素最多。
2.鲜黄花菜吃之前,应先清洗干净,然后焯一下热水,再放到凉水中浸泡几个小时,并且充分炒熟煮透,这样就能够去除其中的毒素,从而避免食物中毒。
3.吃干黄花菜更保险。
干黄花菜虽不如新鲜黄花菜好吃,但黄花菜干制过程可以破坏其所含的毒素,因此吃起来更放心。
三个方法挑到优质黄花菜:
消费者在选购干黄花菜时,可从以下三方面判断其品质。
1.外观上。优质干黄花菜色泽呈浅褐色或淡黄色,条长且粗壮,粗细均匀,无杂质。如果色泽深黄、略带微红或色泽带黑,条身长短不一,粗细不均,而且混有杂物,说明质量较差。
2.手感上。用手攥一把干黄花菜,手感柔软有弹性,松手后随即松散,说明其含水量适度。如果松手后久不散开,说明其含水量较大。如果质地坚硬易折断,表明品质较差。
3.气味上。干黄花菜可以闻到其清香气味。如有霉味、硫磺味或烟味,建议不要购买。
