<p><b>12.6.2020 Rainy Sunday DaLian</b></p> <p><b>和面:Preparing the Dough [dəu]</b></p><p>Babies, let’s start by preparing the dough. We will be using <span style="color: rgb(22, 126, 251);">flour</span>面粉 and water to make the dough.</p><p>Pour the flour into a large mixing bowl [bəul]. Stir the flour as you slowly add water.</p><p>When the flour <span style="color: rgb(22, 126, 251);">starts to cake</span>变成面疙瘩, it’s time for us to use our hands to work on the dough下手和面.</p><p>Hold the bowl with one hand and use the other hand to <span style="color: rgb(22, 126, 251);">knead揉面</span> the dough until it becomes smooth. The dough is ready when the bowl and your hands are clean and no longer sticky.</p><p>Put the dough into a bowl and let it <span style="color: rgb(22, 126, 251);">stand</span> for a while. Remember to cover the bowl with a lid, otherwise the dough will become dry. </p> <b>做馅:Preparing the Filling</b><br>Let's prepare the filling.<br>Today, we are going to pork and <font color="#167efb">fennel茴香 </font>dumplings. First, we need to pick out and rinse the fennel.<br>The ingredients include an egg, a handful of fennel, some ginger, a pinch of salt, a dab of soy sauce [sɔːs], some cooking wine and some sesame oil.<br>Start by chopping the pork into ground meat on the chopping board.<div>Next, dice the fennel. Hold the fennel with your left hand. Use your right hand to hold the knife and chop bit by bit. <br>Great. Now put the diced fennel and pork ground into cooking pot.</div><div><br>Your dad is cutting the ginger into small pieces and adding them into this pot along with the fennel and pork ground. Then, add some salt, soy sauce,sesame oil and an egg mix them together. The filling is now ready. <br></div> <b>擀皮:Making the Dumpling Wrappers / Skin</b><br>George,it's time to make the dumpling wrappers. First of all, we need to clean the <font color="#167efb">cutting / chopping board</font> <font color="#167efb">案板</font>and then<font color="#167efb"> sprinkle撒 </font><font color="#333333">some flour </font>on it. This makes sure the dough won't stick onto the chopping board.<br>Now, let's take out the dough that we prepared earlier. Use a knife to cut the dough in half and place one of the halves on the chopping board. <br>Knead and roll the dough into a long strip. Make sure the thickness is<font color="#167efb"> even均匀的</font>.<br>Next, cut the dough into even slices with a knife.<br>After that, dust some flour on the small slices of dough and put them to one end of the chopping board.<br>Put one of the cut dough slices in the center of the chopping board. Push / press it<font color="#167efb"> flat</font> with one hand. Roll it out into a thin wrapper with a <font color="#167efb">rolling pin擀面杖.</font> You'd better make the edge thinner than the center, which will come in handy at later stages. <br>Repeat with other dough slices. Make sure both sides of the wrapper are dusted with flour so that they won't stick together. <b>包饺子:Making Dumplings</b><br>Little buddies, we are finally ready to make dumplings. Take a wrapper and put it in one hand. <font color="#167efb">Cup</font> your hand into the shape of a small bowl.<br><font color="#167efb">Scoop</font> /skuːp/ 用勺舀some filling and put it in the center of the wrapper. Then pinch from one end to the other. <br>Place the dumplings on the floured chopping board. Repeat with the remaining dough and filling. <br> <b>煮饺子:Cooking Dumplings</b><br><br><div>We are finally ready to cook the dumplings. Use a large pot and fill it half full with water.<br>Put the pot on the stove, turn on the gas and bring it to a boil. You can stand on a chair to cook.</div><div>When the water boils and bubbles break on the surface, we can put in the dumplings. Be careful and don’t put in too many at a time. We can cook them in several<font color="#167efb"> batche<u>s</u> /ˈbætʃɪz/一批.</font><br>As soon as the dumplings go into the water, we need to stir with the back side of the<font color="#167efb"> ladle /ˈleɪdl/长柄杓 </font>immediately. This will make the dumplings<font color="#167efb"> swirl /swɜːrl/盘绕</font> in the water.<br>When the boiling water <font color="#ff8a00">is about to</font> <font color="#167efb">overflow</font>, we could add some cold water and continue to stir. Usually, the dumplings are fully cooked after three boils.
