We will be using flour and water to make the dough.</h3><h3>2. 先把一些面粉倒在盆里,一边把水慢慢倒进面粉里,一边搅拌面粉。</h3><h3>Pour the flour into a large mixing bowl [bəul]. Stir the flour as you slowly add water.</h3><h3>3. 当面粉变成面疙瘩的时候,我们就可以下手和面了。</h3><h3>When the flour starts to cake, it’s time for us to use our hands to work on the dough.</h3><h3>4.和面时,一只手握住盆的边缘,另一只手用力揉面,揉到面团表面光滑为止。当盆和手都很干净不沾黏时,面就和好了。</h3><h3>Hold the bowl with one hand and use the other hand to knead the dough until it becomes smooth. The dough is ready when the bowl and your hands are clean and no longer sticky.</h3><h3>5. 把面放在盆里醒一会儿,注意要用锅盖把盆盖起来,不然面会变干的。</h3><h3>Put the dough into a bowl and let it stand for a while. Remember to cover the bowl with a lid, otherwise the dough will become dry.</h3> <h3>二、做馅:Preparing the Filling</h3><h3>6. 孩子们,在醒面的同时,咱们干点别的,做馅儿。</h3><h3>Children, while the dough is standing, let’s switch gears and prepare the filling.</h3><h3>7. 今天,咱们包韭菜鸡蛋馅儿饺子。首先,我们要把韭菜择好、洗净。</h3><h3>Today, we are going to make egg and chive dumplings. First, we need to pickout and rinse the chives.</h3><h3>8. 原料包括:三个鸡蛋、一把韭菜、姜、盐、酱油、料酒和香油少许。</h3><h3>The ingredients include three eggs, a handful of chives, some ginger, a pinch of salt, a dab of soy sauce [sɔːs], some cooking wine and some sesame oil.</h3><h3>9. 首先,把鸡蛋打在碗里,用力把鸡蛋打散。</h3><h3>Start by cracking the eggs into a bowl and beating them well.</h3><h3>10. 然后,在锅中放入少许油,把鸡蛋炒熟、炒碎。</h3><h3>Then add some oil into the wok and stir fry the eggs into small pieces.</h3><h3>11. 接下来,把韭菜切成小块。切的时候左手握住韭菜,右手拿刀,一点一点切。</h3><h3>Next, dice the chives. Hold the chives with your left hand. Use your right hand to hold the knife and chop bit by bit. </h3><h3>12. 好了,现在把切好的韭菜和炒好的鸡蛋放进一个大盆里。</h3><h3>Great. Now put the diced chives and fried eggs into a large mixing bowl.</h3><h3>13. 把姜切成沫,放入盛有鸡蛋和韭菜的盆里。然后加入适量盐、酱油、料酒、香油,之后把馅儿搅拌均匀。这样馅儿就做好了。</h3><h3>Cut the ginger into small pieces and add them into the mixing bowl along with the eggs and chives. Then, add some salt, soy sauce, cooking wine, sesame oil and mix them together. The filling is now ready.</h3> <h3>三、擀皮:Making the Dumpling Wrappers / Skin</h3><h3>14. 宝贝们,该做饺子皮了。首先,我们把案板清理干净,在上面撒一些面粉,这样面就不会粘在案板上了。</h3><h3>Sweethearts, it’s time to make the dumpling wrappers. First of all, we need to clean the cutting / chopping board and then sprinkle some flour on it. This makes sure the dough won't stick onto the chopping board.</h3><h3>15. 现在,我们拿出和好的面,用刀把它切成两半,取出一半放在案板上。</h3><h3>Now, let’s take out the dough that we prepared earlier. Use a knife to cut the dough in half and place one of the halves on the chopping board.</h3><h3>16. 用手把面揉搓成一个长条,注意要保持粗细均匀。</h3><h3>Knead and roll the dough into a long strip. Make sure the thickness is even.</h3><h3>17. 然后,用刀把长条切成长度均匀的小段。</h3><h3>Next, cut the dough into even slices with a knife.</h3><h3>18. 切好之后,在小面块上撒一些面粉,然后把小面块们放到案板一侧。</h3><h3>After that, dust some flour on the small slices of dough and put them to oneend of the chopping board.</h3><h3>19. 拿一个小面块放在案板中央,用手把它按扁。用擀面杖把它擀成圆形的薄片。最好让边儿比中间薄,这样之后包起来更方便。</h3><h3>Put one of the cut dough slices in the center of the chopping board. Push /press it flat with one hand. Roll it out into a thin wrapper with a rolling pin. You'd better make the edge thinner than the center, which will come in handyat later stages. </h3><h3>20. 用相同的方法处理其他的小面块。注意每张饺子皮两面都要沾上补面,这样它们才不会粘在一起。</h3><h3>Repeat with other dough slices. Make sure both sides of the wrapper are dusted with flour so that they won’t stick together.</h3> <h3>四、包饺子:Making Dumplings</h3><h3>21. 小家伙们,我们终于可以开始包了。拿一张饺子皮,放在手里,手心弯曲成小碗的形状。</h3><h3>Little buddies, we are finally ready to make dumplings. Take a wrapper and put it in one hand. Cup your hand into the shape of a small bowl.</h3><h3>22. 用勺子取一点儿馅儿放在饺子皮中央,轻轻压实,把馅儿固定住。</h3><h3>Scoop some filling and put it in the center of the wrapper. Press it down gently to make sure the filling stays in the center.</h3><h3>23. 把饺子皮对折,先把正中间捏在一起固定住,然后从饺子的一端捏到另一端。</h3><h3>Fold the wrapper in half and pinch the middle together. Then pinch from one end to the other. </h3><h3>24. 把包好的饺子放在撒有补面的案板上。用相同的方法处理剩下的面和馅。</h3><h3>Place the dumplings on the floured chopping board. Repeat with the remainingdough and filling.</h3> <h3>五、煮饺子:Cooking Dumplings</h3><h3>25. 小朋友们,咱们终于可以煮饺子了。拿一个大锅,接半锅水。</h3><h3>Kids, we are finally ready to cook the dumplings. Use a large pot and fill it half full with water.</h3><h3>26. 把锅放在灶上,拧开火,开始烧水。</h3><h3>Put the pot on the stove, turn on the gas and bring it to a boil. </h3><h3>27. 水开了冒泡泡的时候,就可以把饺子下进去了。注意一次不要下太多,可以分几次来煮。</h3><h3>When the water boils and bubbles break on the surface, we can put in the dumplings. Be careful and don’t put in too many at a time. We can cook them in several batches.</h3><h3>28. 饺子下水后,要马上开始用勺的背面搅拌,使饺子在水中转动。</h3><h3>As soon as the dumplings go into the water, we need to stir with the back side of the ladle immediately. This will make the dumplings swirl in the water.</h3><h3>29. 水开了,马上要溢出来时,我们可以往锅里加一些凉水,并继续搅动。煮饺子的时候一般沸腾三次就可以了。俗话说,三开饺子两开面。</h3><h3>When the boiling water is about to overflow, we could add some cold water and continue to stir. Usually, the dumplings are fully cooked after three boils. Therule says: boil three times for dumplings and two times for noodles.</h3><h3>30. 当所有饺子都漂在水面上时,就说明饺子煮熟了。开饭啦!</h3><h3>When all the dumplings are floating on the water, it means they are fullycooked. Dinner time!</h3>
