Let’s start......</h3> <h3>1. Dough饼皮</h3><h3>Flour中粉: 165g</h3><h3>Alkaline Water枧水(也叫碱水): 4g</h3><h3>Golden syrup 转化糖浆: 116g</h3><h3>Peanut oil花生油: 50g</h3><h3><br></h3><h3>2. Filling馅料</h3><h3>Lotus seed paste莲蓉 (20, 27-28g each)</h3><h3>Slated egg yolks 咸蛋黄 (20, 7-8g each, about half of an egg yolk)</h3><h3><br></h3><h3>3. Egg Glaze表面刷液</h3><h3>Egg yolk蛋黄 (1个)</h3><h3>Egg white蛋白 (1/4, about 8g)</h3> Steps <h3>1. Mix together the ingredients for the dough.</h3><h3>Stir (搅拌) together the alkaline water, golden syrup, and peanut oil.</h3><h3><br></h3><h3>Sift (筛) in the flour into the mix slowly.</h3><h3>Mix these ingredients together to form a dough.</h3><h3><br></h3><h3>Cover the dough with saran wrap. (保鲜膜)</h3><h3>Set the dough aside for at least 3 hours.</h3><h3><br></h3><h3>制作饼皮,将枧水、糖浆、花生油混合后搅拌,加入过筛面粉,制成面团。保鲜膜包好放置3个小时。</h3> <h3>2.Prepare the filling. </h3><h3><ul><li>Separate the lotus seed paste into 20 equal parts and roll into balls.</li></ul></h3><h3>将莲蓉分成20等分</h3><h3><ul><li>Make a hole in the ball of lotus paste, put the egg yolk inside, and wrap it.</li></ul></h3><h3>在莲蓉团中压出一个洞,把半个生蛋黄放进去,用莲蓉包住它</h3><h3><ul><li>Making sure the weight of wrapped lotus seed and egg yolk is about 35g.</li></ul></h3><h3>莲蓉蛋黄球的总量大概在35克左右,否则太大会包不下哦。</h3><h3> </h3><h3><ul><li>Make the lotus seed paste that covers the egg yolk into a ball again.</li></ul></h3><h3>把莲蓉鸭蛋馅料揉成球。</h3><h3><br></h3><h3><ul><li>Cover the balls with saran wrap and set it aside.</li></ul></h3><h3>用保鲜膜包好放置待用。</h3> <h3>3.Separate the dough into 20 equal parts, 15g each. </h3><h3>Roll each of those into a ball as well. Cover the balls with saran wrap and set it aside.</h3><h3>分割饼皮成20等份,15g一个,揉成球形,保鲜膜包好放置待用。</h3> <h3>4.Assemble your mooncake. </h3><h3>Flatten each piece of dough into a small disk.</h3><h3>Cover the lotus paste ball (with the egg yolk inside) with the dough completely.</h3><h3>Repeat this for each mooncake.</h3><h3>We should have about 20 mooncakes.</h3><h3>取饼皮,用大拇指把中间部分压扁,放入馅料并包好,重复此步。</h3> <h3>5.Decorate the mooncake with mooncake mold.</h3><h3>Spray your mooncake mold with nonstick spray or oil.</h3><h3>Press each mooncake lightly into the mold.</h3><h3>Take the mooncake out of the mold, and put it onto a baking sheet or baking pan.</h3><h3>月饼模具喷/刷一层薄薄的油,将月饼放入模具里压花,取出放入烤盘。</h3> <h3>6.Bake mooncakes for the first time.</h3><h3><ul><li>Preheat the oven to 200℃ (degrees celsius)</li><li>Put the mooncakes into the oven and bake for 5 minutes.</li><li>While the mooncakes are baking, make the egg wash (蛋液).</li><li>Mix together the egg whites and the egg yolk; sift them through a sieve (过筛) (sieving can be neglected).</li></ul></h3><h3></h3><h3>预热烤箱200度。将月饼放入烤箱烤5分钟。期间做蛋液(可过筛,也可不过)</h3><h3>简约几何图形分割线</h3><h3><br></h3><h3>7.Brush the baked mooncake with egg wash.</h3><h3>Take the mooncakes out of the oven after about 5 minutes and brush them with the egg wash.</h3><h3>5分钟后取出月饼,刷蛋液。</h3> What we need (冰皮月饼) <h3>The ingredients</h3><h3>Mooncake Skin powder (冰皮月饼粉): 200g</h3><h3>Boiled water (开水): 200g</h3><h3>Fillings (馅) (choose the flavors you like): 400g</h3><h3>Mold (模具): 50g mooncake mold. You can make 16 mooncakes.</h3><h3>2.Steps</h3><h3>1. Pour the mooncake skin powder into the boiled water.</h3><h3>2. Stir with an eggbeater (打蛋器) or chopsticks (筷子).</h3><h3>3. While it’s not too hot, roll it into smooth dough.</h3><h3>4. Separate the dough into 16 equal parts, each 25g. Roll them into balls. Cover the saran wrap and set it aside for 1 hour.</h3><h3>5. Prepare 16 fillings, with weight 25g each. Roll them into balls as well.</h3><h3>6. Wrap each filling with the snow skin completely and roll them into balls.</h3><h3>7. Shape the filled dough with the mold</h3><h3>8. Put the filled dough into the mold, press, and the mooncake is ready.</h3><h3>9. If you want to make colorful mooncakes, add some fruit and vegetable powder in step 2 before separating dough.</h3> Moon Phases Moon Phases Demonstration (1) <h3>P: Look baby, the moon rises. What shape is it?</h3><h3>K: It’s round.</h3><h3>P: Yes, you’re right. It's said that the moon is the brightest and roundest on this day. It means family reunion (团圆). But have you ever seen other shapes of the moon?</h3><h3>K: Yes.</h3><h3>P: Correct. The moon looks different at different times throughout the month. Sometimes the moon looks like a banana, and other times it looks like half of a circle, and other times it looks like a big round ball.</h3><h3>以下对话中的P=Parent(家长),K=Kid(孩子)</h3> <h3>Today I’ll show you how this happens.</h3><h3>What we need in this model is: the table lamp, which represents the Sun, the white foam ball representing the moon, your head representing the earth, a pencil and a dark room (the darker, the better).</h3> <h3>1. Now, come inside the room. I’ll turn off the light, and turn on the lamp. look at me. I hold this ball and turn around. /What can you see? /What’s the difference between this side and the other side? Yes, you’re right. This half ball is bright, and the other half is dark.</h3><h3>2. In this position, I can't see any of the bright side of the moon. Can you see it? No? You’re right. We call this a new moon.</h3> <h3>3.Then I make the ball (moon) orbit to my left. What can you see now? Can you see the tiny lighted side, just like a sickle (镰刀) or banana? We call that a crescent moon.</h3> <h3>4.As the ball (moon) keeps moving, we can see more and more of that lighted side. In this position, we can see half of the lighted side. We call it a quarter moon. As it is our first time to see it, it’s called a first quarter moon.</h3> <h3>5.As we keep moving, we see almost the whole lighted side. We call it a gibbous moon.</h3> <h3>6.Then we can see the entire light at half of the moon, that’s a full moon.</h3> <h3>P: Is it interesting? Do you want to hold the ball and turn around by yourself? Have a try, please. Fantastic! Let’s turn on the room light, turn off the lamp and get out.</h3><h3>P: From this activity, do you know if the moon makes light?</h3><h3>K: No.</h3><h3>P: Yes, how clever you are! The moon makes no light. It gets light from the sun, just like the earth. It reflects sunlight towards the earth. Do you want to show everyone what you have seen just now? Now let’s go on the next interesting activity.</h3><h3>Moon Phases Demonstration (2) </h3><h3>P: Can you get out your Oreo cookies? I need 8 pieces.</h3><h3>K: Yes, mommy. 1, 2, 3……8.</h3><h3>P: Perfect. Now let’s do it. The white frosting is the lighted part of the moon, we need to separate the cookies into two halves. We're back to a gibbous moon at this position. But this time the light is on the opposite side, then another quarter moon, last quarter moon (another crescent), and finally back to new moon and the cycle begins again.</h3> <h3>8 Oreo cookies</h3><h3>Apopsicle [ˈpɑpsɪk(ə)l] stick (雪糕棒) or other tool, such as toothpick (牙签) for scraping the frosting (去掉糖霜)</h3><h3>2.Steps</h3><h3>1. Twist an Oreo slowly to maximize the amount of frosting on one side when you separate the halves. In case you fail, you can eat the cookie and then try a new one.</h3><h3>2. Create the phases of the moon out of the frosting with the popsicle stick or other tools.</h3><h3>3. Arrange the phases of the moon in order, just as what we have seen. Well done sweetheart.</h3><h3>If you don’t have Oreo cookies at home, you can ask your kids to draw the moon phases on paper.</h3>
