第一次,在八十年代中期,仿佛记得所在的山区小县南坪还没有人开火锅店。既便是有人开火锅店,那个年代吃火锅,也是挺有\"高度\"的消费。这对于刚当教师不久的我,甚至那个年代凡是拿工资的人来说,只要是不具备签字公款吃火锅便利条件的,仅凭工资私费,是无法掋挡其火锅店\"高处不胜寒\"的。一个已放寒假的下雪天,外地工作的发小哥们儿岗云回南坪了,我很想尽一尽地主之谊,同时又想,其宴请方式应该要有一定的\"高度\"。于是,便在我教书的子弟校办公室的铁板炉上,炒制火锅底料、备食材、发海带,以火锅与60度江津白酒款待他。初中时,与他一起,对他们班后面黑扳上,每期所选的几何难题,进行过\"砍瓜切菜\"般的\"快意江湖\"。那次我们两个人的火锅,也是当年般的\"快意江湖\":一瓶一斤装的江津白酒,我喝了5钱,他喝了9两5钱。
第二次,刚进入九十年代,南坪已经有了火锅店,我也有了签字公款吃火锅的\"高度\",却也有过一次\"隆重\"地操刀火锅。那时刚改行至一小国企不久,便遇县审计局来厂审计。先是审计进场,宣读审计纪律与事项,接下来又是\"现金盘库\",又是报表、总账、明细账、财务凭证等等,一整套吓人吓人的动作。这对于我这个教书出身,又刚出道不久的人来说,还真有点儿觉得他们好\"高大上\"的感觉。于是,我想总不至于按他们宣布的\"审计纪律\",不打馆子、不上火锅店吃火锅,就真的在伙食团吃冷冰冰的大锅饭吧,那也是年底的一个下雪天,操刀审计的可是几位美眉啊。还好,有了上述\"隆重\"操刀火锅的底气,便在厂保卫科的电炉上,隆重地操刀了一回火锅,其手艺被几位美眉\"高大上\"赞扬到了一定的\"高度\"。当然,其最后的审计报告,自然也就读来\"婉转动听\"、\"平易近人\"。
后来,随着时代的\"与时俱进\",及工作与地点的变动,又应对过若干次,诸如地区级、国家级更具有\"高度\"的审计。虽说操刀审计的依然是美眉,却已是流行喝洋酒品普洱的美眉\"高大上\"了。因此,若再是如上\"八角、三奈、豆瓣\"般地操刀火锅,便会顿失\"高度\"滔滔,而不入流地土气了。
第三次,前两年还未出嫁的女儿回来过年,为了不至于让她因家庭的突然变故而觉得冷清,特别隆重地操刀了一次火锅(燃具是土陶火炉,燃料是木炭,故特别地隆重)。操刀火锅做好后,把我母亲、弟弟、妹妹他们一并喊来,一起吃了一顿热火朝天的火锅。之后,便又带着女儿雪秦岭、踏巴山、涉汉水、饮长江,一路到达老川东(现重庆市)的万州。老家万州梁平的弟弟及亲属们来万州,又款待我们父女俩,吃了一台正宗火锅店的重庆火锅。因而,那年过年,我和女儿便过了一个\"隆重\"的火锅年。
然而,在上述\"一二三\"的\"隆重\"下,思绪却在下雪的天气下,又有些冷静了下来。以至其冷冷静静的思绪游走到了关于火锅的前世今生。
记得那是八十年代初,成都至广元的504次每站都停的慢车上,一个学生模样的小伙子,他对面坐了一位学生模样的姑娘。姑娘在看烹饪方面的书,是烹饪学校的教材类书籍。小伙子闲且好奇,仗着自己\"如果我有一米七以上的高度就好了\"的帅气,斗胆向\"烹饪学生姑娘\"开口借了一本烹饪学校的教材书,并认真而纯朴地阅读了起来。书中有火锅的炒制配料与方法,也有火锅的前世今生:火锅源于四川农耕时代底层的江河跑船拉纤人,他们以人们废弃而\"低到浪花里\"的动物内脏,作补充人体肉类蛋白的之需之烹。其\"之需之烹\"的四川火锅,又分长江流域的重庆流派与嘉陵江流域的广元流派。模糊地记得,一者以鳝鱼为主为其特色,另者以毛肚为主为其特色,但二者谁以毛脏为主,谁以鳝鱼为主,却因借书看的年代太久远,实在记忆不起了。不过,当今清楚的却是火锅的广元流派,早已在滚滚红尘的\"江湖\"中销声匿迹了。其踪迹,除了那位小伙子借的那本书中记述过以外,可能连广元人自己也不知道:火锅,曾与广元有关。显然,火车上借书的、从书中读到火锅前世今生的那位\"高度不够\"的帅小伙,一定与我有关。
当然,火锅的前世今生,也不止是上述书中的那一点点\"身世寒江,低至浪花\",也有年轻时\"游走四方\"亲历过的老式街边重庆火锅。当今的时代,大多数的人认为:亲朋好友及工作需要的众人相聚,需到达名方的火热与高度方吃火锅。然而,世上本无繁华,各人、各事、各物,各自却有着自身固有的火热与高度,既便是最底层、最冷清的个体,也有着内在的那份火热与高度。犹如那远去的重庆街边火锅:街沿边,一床竹席围一个火锅店,四条板凳围一口锅,食客互不相识,同涮一口锅,各人占据着自己的那一隔,一荤一素,三碗干饭,抺汗走人,各奔东西。这便是当今火锅店的本原与身世。如此一来,弄清了本原与身世,便无需刻意的火热与高度,也能吃出火锅应有的火热与高度。犹如,诗人龚学敏,在近期写给他一位朋友的一篇文章中写道:高度,这与身世有关。
也犹如今天,周末,下雪的天气下,虽然看不清雪花飘落的高度与方向,却\"舍不得死\"地进而又想:高度,操刀火锅一二三---隆重的、书上的、街边的那种。

第一次,在八十年代中期,仿佛记得所在的山区小县南坪还没有人开火锅店。既便是有人开火锅店,那个年代吃火锅,也是挺有\"高度\"的消费。这对于刚当教师不久的我,甚至那个年代凡是拿工资的人来说,只要是不具备签字公款吃火锅便利条件的,仅凭工资私费,是无法掋挡其火锅店\"高处不胜寒\"的。一个已放寒假的下雪天,外地工作的发小哥们儿岗云回南坪了,我很想尽一尽地主之谊,同时又想,其宴请方式应该要有一定的\"高度\"。于是,便在我教书的子弟校办公室的铁板炉上,炒制火锅底料、备食材、发海带,以火锅与60度江津白酒款待他。初中时,与他一起,对他们班后面黑扳上,每期所选的几何难题,进行过\"砍瓜切菜\"般的\"快意江湖\"。那次我们两个人的火锅,也是当年般的\"快意江湖\":一瓶一斤装的江津白酒,我喝了5钱,他喝了9两5钱。
第二次,刚进入九十年代,南坪已经有了火锅店,我也有了签字公款吃火锅的\"高度\",却也有过一次\"隆重\"地操刀火锅。那时刚改行至一小国企不久,便遇县审计局来厂审计。先是审计进场,宣读审计纪律与事项,接下来又是\"现金盘库\",又是报表、总账、明细账、财务凭证等等,一整套吓人吓人的动作。这对于我这个教书出身,又刚出道不久的人来说,还真有点儿觉得他们好\"高大上\"的感觉。于是,我想总不至于按他们宣布的\"审计纪律\",不打馆子、不上火锅店吃火锅,就真的在伙食团吃冷冰冰的大锅饭吧,那也是年底的一个下雪天,操刀审计的可是几位美眉啊。还好,有了上述\"隆重\"操刀火锅的底气,便在厂保卫科的电炉上,隆重地操刀了一回火锅,其手艺被几位美眉\"高大上\"赞扬到了一定的\"高度\"。当然,其最后的审计报告,自然也就读来\"婉转动听\"、\"平易近人\"。
后来,随着时代的\"与时俱进\",及工作与地点的变动,又应对过若干次,诸如地区级、国家级更具有\"高度\"的审计。虽说操刀审计的依然是美眉,却已是流行喝洋酒品普洱的美眉\"高大上\"了。因此,若再是如上\"八角、三奈、豆瓣\"般地操刀火锅,便会顿失\"高度\"滔滔,而不入流地土气了。
第三次,前两年还未出嫁的女儿回来过年,为了不至于让她因家庭的突然变故而觉得冷清,特别隆重地操刀了一次火锅(燃具是土陶火炉,燃料是木炭,故特别地隆重)。操刀火锅做好后,把我母亲、弟弟、妹妹他们一并喊来,一起吃了一顿热火朝天的火锅。之后,便又带着女儿雪秦岭、踏巴山、涉汉水、饮长江,一路到达老川东(现重庆市)的万州。老家万州梁平的弟弟及亲属们来万州,又款待我们父女俩,吃了一台正宗火锅店的重庆火锅。因而,那年过年,我和女儿便过了一个\"隆重\"的火锅年。
然而,在上述\"一二三\"的\"隆重\"下,思绪却在下雪的天气下,又有些冷静了下来。以至其冷冷静静的思绪游走到了关于火锅的前世今生。
记得那是八十年代初,成都至广元的504次每站都停的慢车上,一个学生模样的小伙子,他对面坐了一位学生模样的姑娘。姑娘在看烹饪方面的书,是烹饪学校的教材类书籍。小伙子闲且好奇,仗着自己\"如果我有一米七以上的高度就好了\"的帅气,斗胆向\"烹饪学生姑娘\"开口借了一本烹饪学校的教材书,并认真而纯朴地阅读了起来。书中有火锅的炒制配料与方法,也有火锅的前世今生:火锅源于四川农耕时代底层的江河跑船拉纤人,他们以人们废弃而\"低到浪花里\"的动物内脏,作补充人体肉类蛋白的之需之烹。其\"之需之烹\"的四川火锅,又分长江流域的重庆流派与嘉陵江流域的广元流派。模糊地记得,一者以鳝鱼为主为其特色,另者以毛肚为主为其特色,但二者谁以毛脏为主,谁以鳝鱼为主,却因借书看的年代太久远,实在记忆不起了。不过,当今清楚的却是火锅的广元流派,早已在滚滚红尘的\"江湖\"中销声匿迹了。其踪迹,除了那位小伙子借的那本书中记述过以外,可能连广元人自己也不知道:火锅,曾与广元有关。显然,火车上借书的、从书中读到火锅前世今生的那位\"高度不够\"的帅小伙,一定与我有关。
当然,火锅的前世今生,也不止是上述书中的那一点点\"身世寒江,低至浪花\",也有年轻时\"游走四方\"亲历过的老式街边重庆火锅。当今的时代,大多数的人认为:亲朋好友及工作需要的众人相聚,需到达名方的火热与高度方吃火锅。然而,世上本无繁华,各人、各事、各物,各自却有着自身固有的火热与高度,既便是最底层、最冷清的个体,也有着内在的那份火热与高度。犹如那远去的重庆街边火锅:街沿边,一床竹席围一个火锅店,四条板凳围一口锅,食客互不相识,同涮一口锅,各人占据着自己的那一隔,一荤一素,三碗干饭,抺汗走人,各奔东西。这便是当今火锅店的本原与身世。如此一来,弄清了本原与身世,便无需刻意的火热与高度,也能吃出火锅应有的火热与高度。犹如,诗人龚学敏,在近期写给他一位朋友的一篇文章中写道:高度,这与身世有关。
也犹如今天,周末,下雪的天气下,虽然看不清雪花飘落的高度与方向,却\"舍不得死\"地进而又想:高度,操刀火锅一二三---隆重的、书上的、街边的那种。
